When we think of craft beer, our minds quickly travel to barley fields, aromatic hops, and tirelessly working yeasts. However, at Cerveza SanFrutos, we know there is an element that sustains the entire process, a "secret" ingredient that isn't always talked about as much as it should be: water.

As Mateo tells us in the video accompanying this article, water is the soul of our beers. More than a secret, it is our greatest geographical privilege. Our brewery is located in an enviable natural setting, at the foothills of the Sierra de Guadarrama, guarded by emblematic peaks such as Peñalara and the unmistakable silhouette of La Mujer Muerta.
The magic of granite: Low mineralization water
What makes this location so special for brewing beer? The answer lies beneath our feet: geology. The Sierra de Guadarrama is a granitic mountain range. Granite is a practically impermeable rock, which means that the water flowing through these mountains and springs does not carry or absorb large amounts of minerals along its path.
The direct result of this is water of exceptional quality, characterized by a very low mineralization. For a master brewer, this is exactly like having a perfect blank canvas. Unlike other areas, we don't have to apply technical processes to remove hardness or elements from the water; we simply start from a pure base to which we only need to add the specific salts and minerals required for each recipe.
A blank canvas for brewing versatility
Having access to this water profile gives us enormous capacity and flexibility in the brewery. Being able to profile and customize the water so easily allows us to brew a huge variety of different beer styles with absolute precision. This versatility is what allows us to create everything from hoppy, hazy, and silky profiles like NEIPAs or powerful DIPAs, to dark and deep beers like Stouts, always guaranteeing the best mouthfeel.
No water, no beer
In the brewhouse, we can put in maximum effort looking for the best ingredients in the world. We can bring in super exclusive experimental hops from New Zealand. We can select incredible yeasts and use the most wonderful malts on the market. But the technical reality is undeniable: without a perfect water base, we would be nothing.
Water is the vehicle that integrates all the aromas, the element that rounds out the bitterness, and the foundation upon which any great recipe is built. So, the next time you open one of our beers, remember the origin of that liquid and the journey it has made from the peaks of Guadarrama to your glass.
